Recipe

Creamy Tomato Pasta (@whatinthechef)
Ingredients
  • 2 tbsp oil
  • 1 shallot
  • 3 garlic cloves
  • 1-2 chicken breasts (depending on how much you want)
  • Large pinch of salt
  • Sprinkle of pepper
  • Sprinkle of mixed herbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Sprinkle of paprika
  • 1 tin of finely chopped tomatoes
  • 700ml veg stock
  • 150ml double cream
  • 400g penne pasta
  • Grated cheese
  • Fresh Parsley
Method
  • Dice the onion and chop the garlic. Heat the oil in a pan and add ingredients to the pan. Cook and stir for a few minutes until softened.
  • Slice the chicken breast in strips then add it to the pan. Add in the spices, stir and cook for a few minutes.
  • Add in the tin of tomatoes, veg stock, and cream and bring to a boil, then drop the heat to medium. Add in the pasta and stir in. Cook for 10-15 minutes, and stir occasionally to prevent sticking. 
  • Once done, turn off the heat, add cheese and chopped parsley. Plate up and enjoy x
