Aunty’s Steamed Pudding 

WARNING – this recipe uses golden syrup, so if your aunty does a burnt sugar instead, then go ask for her recipe. I dont wanna hear it.  

Ingredients 

  • 125g butter 
  • 125g golden syrup 
  • 2 eggs 
  • ½ cup brown sugar 
  • ½ cup white sugar 
  • 2 cups flour 
  • 2 tsp baking powder 
  • 1½ cups milk 
  • 1½ tsp baking soda 
  • Optional: mixed spice or ground ginger, to taste 

You will also need a baby formula tin with the top cut off (you can do this with a can opender)  

Method 

  1. Fill a large steamer with enough water to come halfway up the sides of your pudding tin. 
  1. In a pot, gently melt the butter and golden syrup together. Remove from the heat and allow to cool slightly. 
  1. In another pot, gently heat the milk until warm. 
  1. Pour the warm milk over the brown and white sugar and mix well. 
  1. Add the eggs and stir to combine. 
  1. Add the flour and baking powder, mixing gently. 
  1. Pour in the warm milk mixture and add the baking soda. Mix until everything is just combined. 
  1. Grease your pudding tin well and pour in the mixture. Cover tightly with tin foil. 
  1. Bring the water in the steamer to the boil, then reduce the heat so the water continues to gently steam. 
  1. Carefully place the pudding tin into the steamer and cover with the lid. 
  1. Steam for around 2 hours, or just under, until the pudding is cooked through and a skewer inserted into the centre comes out clean. 
  1. Carefully remove from the steamer, allow to cool slightly, then serve warm. 

Aunty’s Tip 

For a little extra warmth and spice, add mixed spice or ground ginger to the mixture. Serve it hot with custard, cream or a generous scoop of ice cream.
