WARNING – this recipe uses golden syrup, so if your aunty does a burnt sugar instead, then go ask for her recipe. I dont wanna hear it.
Ingredients
- 125g butter
- 125g golden syrup
- 2 eggs
- ½ cup brown sugar
- ½ cup white sugar
- 2 cups flour
- 2 tsp baking powder
- 1½ cups milk
- 1½ tsp baking soda
- Optional: mixed spice or ground ginger, to taste
You will also need a baby formula tin with the top cut off (you can do this with a can opender)
Method
- Fill a large steamer with enough water to come halfway up the sides of your pudding tin.
- In a pot, gently melt the butter and golden syrup together. Remove from the heat and allow to cool slightly.
- In another pot, gently heat the milk until warm.
- Pour the warm milk over the brown and white sugar and mix well.
- Add the eggs and stir to combine.
- Add the flour and baking powder, mixing gently.
- Pour in the warm milk mixture and add the baking soda. Mix until everything is just combined.
- Grease your pudding tin well and pour in the mixture. Cover tightly with tin foil.
- Bring the water in the steamer to the boil, then reduce the heat so the water continues to gently steam.
- Carefully place the pudding tin into the steamer and cover with the lid.
- Steam for around 2 hours, or just under, until the pudding is cooked through and a skewer inserted into the centre comes out clean.
- Carefully remove from the steamer, allow to cool slightly, then serve warm.
Aunty’s Tip
For a little extra warmth and spice, add mixed spice or ground ginger to the mixture. Serve it hot with custard, cream or a generous scoop of ice cream.
