Alright gang, this is a snack that I grew up eating, and it is the best and easiest comfort food to make at home with minimal ingredients.
Ingredients:
- Chicken breast- 1 breast makes about 10 patties
- Puff pastry- I use premade puff pastry from Pams
- Salt
- Pepper
- Oil
- Medium sized onion
- Cumin seeds
- Cornflour
- Egg
Cooking Time:
2 hours
Steps:
Making the filling for the patties
- Boil the chicken breast in a small pot until cooked. Add salt to the water to season the chicken to taste.
- Shred the chicken and leave to cool.
- Dice onion.
- In a small pan, add some oil and the onion. Cook medium heat until cooked. Tip: Do not put too much oil in the pan, otherwise the filling for the patties will be too oily.
- Add salt, pepper, and cumin seeds for flavour. You can also add chopped chillies.
- Add the shredded chicken to the pan and stir to mix it with the onion.
- In a cup, add some hot water and one teaspoon of cornflour. Mix it well, then add it to the pan. The onion and chicken mixture should be submerged in the cornflour solution.
- Mix well until the water evaporates and you are left with something that looks like mashed potatoes and sticks together.
- Let the filling cool. This is very important.
- Take out the puff pastry sheets and cut each sheet into three long strips.
- Put about one tablespoon of filling on one end of a strip. Fold the other end of the strip over the filling and close the edges using a fork to form a pocket.
- Place the pockets onto a baking tray lined with baking paper.
- Crack and whisk one small egg, then use a paint brush to coat the pockets with a layer of egg. This step is very important because it helps brown the patties so you will know when they are cooked.
- Preheat the oven to 220 degrees and put the patties inside. Wait for them to puff up and take them out once they are golden brown.
Your patties are now ready to enjoy!!
