Wake + Bake – Issue 2

HUNGOVER + HUNGRY

Something to remind you of home, mum and a time of your life when you weren’t being harassed by your professor about your shitty work. These baked delights are sure to support your dangerously low bank account as well as your scavenging flat mate’s need for nourishment.

Lemonade Scones

The addition of the lemonade to your wartime classic adds just that subtle hint of bogan-ness needed to cure a hangover. It’s a really solid option if you’re pressed for cash and wanting a small piece of organisation in your chaotic life.

Ingredients:

4 cups of Self-Raising Flour

300ml of Cream

300ml of Lemonade

Pinch of Salt

Method:

Preheat oven to 210°C and line a baking tray with baking paper.

Sift the self-raising flour and salt into a bowl. Make a well in the centre. Pour the cream and lemonade into the dry ingredients and mix together to form a soft dough.

Turn the dough out onto a well-floured bench, dust lightly with flour and gently pat the dough out to a thickness of about 2 centimetres. Cut into approximately 12 pieces and lift each onto the baking tray.

Bake for 10–12 minutes or until golden brown.

Serve with butter or cool and serve with your favourite jam and whipped cream.


Carrot Cake

Not every man’s cup of tea, some of less cultured friends prefer your standard chocolate cake. This will fill you with joy and your stomach with food but will inevitably remind you that your nan is gone and that she’s not coming back

Ingredients:

3 eggs

2 cups soft Brown Sugar

1 cup oil

3 cups grated carrots

2 1/4 cups flour

1/2 cup milk (warm)

1 tsp salt

2 tsp cinnamon

2 tsp of baking soda

1/2 cup walnuts

Cream Cheese Icing:

50g butter (softened)

1/2 cup cream cheese

2 cups Icing Sugar

1 tsp vanilla

2-3 Tbsp milk to mix

Method:

Preheat oven to 160°C bake.

Line a 23cm cake tin with baking paper and grease the sides and bottom.

Beat eggs and Brown Sugar together. Add oil then all other ingredients – mix well. Pour into cake tin.

Bake for 45 – 55 minutes, until a skewer inserted comes out clean. Stand in the tin for 20 mins then turn out and cool on a cake rack. Spread with cream cheese icing when cold.

Cream Cheese Icing:

Beat butter and cream cheese together. Add Icing Sugar, vanilla and sufficient milk to make a light fluffy icing consistency. Spread over cake and decorate with chopped nuts if desired.


Chocolate Chip Cookies

If you have a serious need of serotonin and a complete disregard for your rig then this is the meal for you. For those who have given up on any chance of a sexual encounter in their university days and prefer to fill the void with chocolatey goodness.

Ingredients:

200g butter

1 cup White Sugar

1 cup Soft Brown Sugar

2 eggs

2 tsp vanilla essence

3 cups flour

pinch of salt

1 tsp of baking powder

2 cups chocolate chips

Method:

Preheat oven to 180°.

Melt butter, and add white sugar and brown sugar. Cream together. Beat in the eggs and vanilla then mix in the dry ingredients. 

Roll into medium-sized balls, making sure the mixture is not too wet! Put on a well-greased baking tray. 

Bake for 8-10 minutes.
